1 Food Safety Certified person was able to demonstrate knowledge of two out of the five Food Borne Illnesses (Hep A and Salmonella) and some of the signs and symptoms.
**PIC was informed on the five Food Borne Illnesses and their signs and symptoms during time of inspection.
8 Old food debris/residue observed in the handwashing sink in rear food prep area.
**PIC was instructed to discard food debris and properly wash, rinse, and sanitize interior surfaces of handwashing sink during time of inspection.
13 The following were observed:
-Raw chicken stored above raw pork in walk-in cooler
-Improper storage of opened cans on shelving units and under-the-counter refrigeration unit
-Uncovered potentially hazardous food items in walk-in freezer and under-the-counter refrigeration unit
14 The chlorine concentration in the sanitizing solution of the 3-bay ware-washing sink was 10 ppm, rather than 50-100 ppm as required.
**PIC too corrective action and increased sanitizer concentration to 50 ppm during time of inspection.

-The handwashing sink in the rear food prep area was blocked by table of dry storage items and not accessible at all times for employee use
**PIC was instructed to move dry storage table and to remove food debris from handwashing sink to properly wash, rinse, and sanitize interior surfaces.
