1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation.
Food safety certificate for Carol Durbano expired less than 2 months prior, therefore applied for safe harbor during the inspection.
14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 100 ppm, rather than 200 - 400 ppm as stated on the manufacturer's use directions.
Additional pills added to solution to derive 200 ppm during the inspection.
14 Slicer has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours.
Slicer was taken apart and washed, rinsed and sanitized during the inspection.
35 Working bulk food ingredient storage containers are not labeled with the common name of the food.
Container with flour observed not labelled during the inspection.
38 Food employees observed not wearing or wearing ineffective hair restraints, such as nets, hats, or beard restraints.
39 Moist wiping cloths observed lying on prep table and not stored in sanitizing solution.
