1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. Person in Charge arrived during time of inspection.
1 The Person in Charge did not demonstrate adequate knowledge of the 3 bay warewash sink procedure.

13 Raw animal foods were stored above ready to eat foods in the reach in refrigerator and walk-in cooler. Corrective action was taken and items were relocated.
14 Pink slime observed on the interior of the ice machine bin around the sides by water reservoir. Corrective action was taken and ice was discarded and surfaces were washed, rinsed and sanitized.
45 -Handles were observed missing from chest freezer doors.
-Rust observed on top of chest freezer lid.
-Inoperable reach in refrigerator observed in hallway.
47 -Food residue and debris observed on exterior surfaces of cooking equipment surfaces and preparation table.

21 Ras Malai opened commercially processed ready to eat food, located in the under counter refrigerator, and held more than 48 hours, was not marked with the date it was opened. Person in Charge took corrective action and date marked items.
