1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code regarding temperature control and food borne illnesses/symptoms.
8 Paper towel dispenser empty at the handwash sink in the prep area. Paper towels were provided. Note: Availability of hand drying. Each handwashing sink or group of adjacent sinks shall be provided with one or more of the following: (1) Individual, disposable towels. (2) A continuous towel system that supplies the user with a clean towel. (3) A heated-air hand drying device.
8 Customers were not given access to the restroom. Facility offers dine in (two tables observed) Out of service sign observed on the restroom door. Person in charge was advised to remove the sign. At least one handwashing sink and a number of handwashing sinks necessary for the convenient use by consumers shall be provided in food facilities which allow consumption of food on the food facility premises. Handwash sinks for consumers shall be located in easily accessible areas
13 Raw shell eggs were stored above ready to eat foods in the walk-in cooler.
20 Potentially hazardous foods were not held at 41 degrees F or below as required: - Salad prep unit 46-49F - Chicken in a refrigerator 54F. Chicken was placed in the walk-in cooler, - Sauces in refrigerator was 55-58F. Person in charge was advised to discard.
