20 -Chicken sauces was held at 56-58 degrees F rather than 41 degrees F or below as required stored inside defective reachin refrigerator unit at time of inspection.
-Suaces at serving window (outside of temperature control) was observed at 70 degrees F.
*no temperature logs were available at time of inspection.
45 -Reachin refrigeration observed not maintaining proper temperatures. Food stored in unit observed between 56-58 degrees F.
Orders: Discontinue usage of defective refrigerator unit until repaired immediately.
-Generator for mobile unit observed not working properly at time if inspection.
*Generator turned off at time of inspection, person in charge had to manually turn unit back on for all equipment to be operable.

1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code. Food Safety Certified Person was observed preping food on mobile vendor that had no running water and electricity available.
8 No running water was observed on mobile vendor due to lack of generator.
