1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation.
**The Person in Charge arrived during the inspection.
1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code.
6 Hot water was not available at the handwash sink in the kitchen area at the start of the inspection.
**The hot water valve was closed on the plumbing under the sink; hot water available.
6 A food employee was observed washing their hands at the food preparation sink rather than the designated handwash sink.
**Proper handwashing locations reviewed with the Person in Charge.
8 Old food residue, dishes and utensils observed in the handwash sink in the kitchen and front counter area.
**Proper sink usage reviewed with the Person in Charge.
8 No sign or poster posted at the handwash sink in the kitchen area to remind food employees to wash their hands.
13 Ice cooler stored next to the handwash sink without adequate splash protection.
**Cooler relocated during the inspection.
13 Cleaned blenders and single use cups observed stored next to and on the handwash sink in the kitchen.
13 Observed the washing of equipment being done in the food preparation sink.
**Proper sink usage reviewed with the Person in Charge.
14 The quaternary ammonium concentration in the sanitizing solution of the 3-bay warewash sink was 500+ ppm, rather than 200-400 ppm as stated on the manufacturer's use directions.
**Additional water added to the sanitizing solution; new reading of 400ppm.
36 Visible physical evidence of rodent activity (mouse droppings) observed in the rear hallway storage area.
37 Food is not stored at least 6 inches above the floor in the walk-ins.

-Paper towel dispenser empty at the hand wash sink in the restroom.
-No sign or poster posted at the hand wash sink in the prep area to remind food employees to wash their hands.
*PIC provided soap, sign, and paper towels appropriately.
13 Produce observed being prepped in the "sanitize" basin of the ware wash sink. Proper sink procedures reviewed with PIC. Employee removed produce and relocated to the designated food prep sink.
