1 - The food safety certified handler was not present at start of inspection, she arrived prior to completion of the inspection.
13 - Frozen meat (beef and lamb) stored unpackaged in the reach-in freezer in the butcher area. - Several food items observed uncovered in the walk-in cooler.
13 - Trays with dumplings observed in top of uncovered meat (beef) in the reach-in freezer in the butcher area.
14 The rinse temperature cycle of low temperature dishwasher did not reach 120 degrees F - 140 degrees temperature during the sanitizing cycle of dishwasher as evidence by failure. Final rinse of the temperature indicator was 110 degrees F. *Sanitarian advised the person in charge to use the 3 bay sink to washed, rinsed, and sanitized the dishes, utensils, and equipment until the dishwasher will be fixed.
14 The 3 bay sink not properly setup for sanitation of utensils and equipment. Dirty utensils observed stored in sanitizing bay of 3 compartment sink. PIC took corrective action and washed, rinsed, and sanitized the 3 bay sink during inspection.
21 No dates observed on food in the facility (under-counter refrigerators, walk-in cooler, and reach-in refrigerators. **Sanitarian advised the person in charge to provide dates for the food.
