14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 500 ppm, rather than 200 - 400 ppm as stated on the manufacturer's use directions.
39 Moist wiping cloths observed lying on prep table and not stored in sanitizing solution.
