19 a few slices of ready made pizzas on display food was held at 80 degrees F rather than 135 degrees F or above as required. Person in charge discarded slices of pizza after timer indicates 3 hours from the time it was made.
21 Deli-meat, Ham and cheese opened commercially processed ready to eat food, located in the walk-in cooler, and held more than 48 hours, was not marked with the date it was opened. Person in charge dated opened meat and cheese in walk-in cooler during the inspection.
22 Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food. Documentation to record time and temperature for pizza slices on display was created during the inspection.
