1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code. *The person in charge could not demonstrate proper sanitizing techniques for washing, rinsing and sanitizing utensils and cooking equipment at the 3 basin sink. *The inspector reviewed the proper washing, rinsing and sanitizing method with the person in charge and she was able to demonstrate knowledge.

11 Observed one expired jar of baby formula dated January 22, 2024. The person in charge discarded the baby formula during the inspection.

20 Yogurt was observed being held at 50°F instead of the required 41°F or below. The person in charge moved the yogurt to a reach-in refrigerator with a correct temperature of 40°F. *Except during preparation, cooking or cooling, or when time is used, potentially hazardous food shall be maintained at 5°C (41°F) or less.

21 Tuna salad prepared in the food facility and held for more than 48 hours, located in the retail area, was not date marked. The person in charge date-marking the tuna salad during the inspection.

45 Observations: -Non NSF approved deep freezers in Kitchen -Unused 2 reach-in refrigerator, one in rear area and thee another one in prep area. -Unused 2 chest freezers, one in rear area and thee another one in back storage area. -Dripping water from the Cold prep refrigerator.

45 Cutting boards observed with deep scratches and scoring not allowing for effective cleaning and sanitizing.

47 Utensils use in kitchen equipment shush as sponges and stoppers observed inside utility sink.

53 Cracked floor tile observed throughout facility

53 Observations: -Dead cockroaches observed in the basement. -Unused equipment such as mattress and cabinets observed in the storage area.

54 Observations: -Inadequate lighting in basement. -Broken light bulbs and no lightening in toilet room.
