1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
-Only a Servsafe Food handler certificate observed.
-Must provide confirmation that a person has been signed up for the Servsafe Food Manager course with in 24 hours.
6 Food employees observed donning single use gloves without a prior hand wash.
8 The handwash sink in the food prep area was blocked by a mop bucket and not accessible at all times for employee use.
11 Severely dented, swollen, distressed canned items observed in the canned good storage rack area.
14 The can opener had an accumulation of food residue on the food contact surfaces.
14 Observed pans that are too large to fit completely into the 3-compartment sink for proper washing and sanitizing. All the dishes should be able to be fully submerged into the washing and sanitizing compartments.
-Either use smaller pans or get a bigger 3-compartment sink.
19 * steak was held at 89 degrees F rather than 135 degrees F or above as required.
-The steak was placed into the oven to warm up.
46 Warewash sinks do not have basins large enough to accomodate the largest piece of equipment needing manual cleaning.

11 Severely dented, swollen, distressed canned items observed in food prep area. Can was thrown away during the inspection.
26 Employee coats observed hanging on dry ingredient food racks. Coats were removed during the inspection.
45 - Defective reach-in cooler observed in food prep area.
47 - Dust observed on fan in food prep area. Cleaning is needed.
- Inside of cabinets should be cleaned. Residue was observed.
53 Broom and dust pan were seen resting on the floor between uses rather than being stored on a rack.

8 The handwash sink in the food prep area does not have single use towels, continuous towels, or air drying device.
Paper towels were placed in area during the inspection.
26 Chemicals were stored above or on the same shelf with food, equipment, and/or single service articles in the food prep area. Spray bottle was moved during the inspection
37 Food is not stored at least 6 inches above the floor in walk-in freezer.
45 Non commercial cooking equipment observed: microwave, rice cooker, coffee pot.

- Window seals observed with cobwebs. Cleaning is needed.
