1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department. There was no person present with a valid Philadelphia Food Manager's Food Safety Certificate at the beginning of the inspection. He arrived within the allotted time.
14 Tan residue and slime observed on the interior of the ice machine bin around the cover for the water inlet and ice release areas. An employee began emptying, cleaning and sanitizing the ice machine during the inspection.
36 A door in the common area near the cage storage areas, an outer opening in the food facility does not protect against the entry of insects, rodents, and other animals. A gap was observed at the bottom.
42 Clean dish racks observed being stored on the floor.
45 Raw wood shelf surface, which are not smooth and easily cleanable, being used to support equipment in the cage.
46 -Pink slime and residue observed in the interior top of the warewash machine. -A low wash temperature warning observed on the screen of the warewash machine. The person in charge reset the machine. The warning did not return.
46 The data plate is faded and can not be read on the mechanical dishwasher.
47 -Brown residue observed on the outer surfaces of the bar warewash machine. -Black static dust observed on surfaces in the walk in refrigerator.
53 -The broom and dust pan are stored on the floor rather than hanging on the utility rack. -The utility rack is broken.
53 -Accumulated debris and residue on floor perimeters under warewash machine and behind equipment in the storage area.
