1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department. *The person in charge showed up 10 min after inspection started.
1 The Person in Charge did not demonstrate adequate knowledge of the PA Food Code. * The inspector initiated corrective action by reviewing food borne illnesses with the person in charge.
20 Food items ( Sauces, greens, &corn bread mix) in reach- in refrigerator was held at 58 degrees F rather than 41 degrees F or below as required. *The person in charge initiated corrective action by discarding all food items.
45 The following observations were made: `- Hand wash sink is not properly sealed to the wall in drive thru area. - Under counter refrigerator door has broken hinges. - Cabinet doors where soda dispenser is located is broke. - Reach-in refrigerator is defective. - Hot hold unit near steam table is defective.
