45 The following observations were noted:
-Plastic crates were being used for elevation.
-Cardboard was being used to line lower surfaces in several areas.
-Raw wood was being used for elevation in several areas.
45 Duct-tape was obsreved around the handle of the walk-in cooler.
47 The following observations were noted:
-Ice build-up in several freezers in the basement storage area.
-The fans of the walk-in cooler were in need of cleaning due to dust accumulation.
-The floor of the walk-in cooler was in need of cleaning due to residue.
53 Floor cleaning was needed under and around equipment in several areas due to debris.
54 The hood filters were observed with an accumulation of static dust and grease.

1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
NOTE: A food safety certified person was not present during the arrival of the inspection. The food safety certified person later arrived.
4 An open employee's beverage container was observed in a food preparation area. The person in charge removed/discarded the beverage container.

45 The 3-compartment warewashing sink was observed not properly sealed to the wall.
45 Raw wood, which are not smooth and easily cleanable, were being used to support equipment in the basement storage area.

-Ice build-up in several chest freezers located in the basement storage area.
-Floor cleaning was needed in the walk-in cooler due to food debris.
53 General floor cleaning was needed around the perimeters of the floor in the food preparation area, warewashing area, and basement storage area due to debris and residue.
54 The hood filters were observed with an accumulation of static dust and grease.
