14 PIC observed making manual sanitizer with cold water at the time of inspection and Steramine tablets were not dissolving- The quaternary ammonium concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions. *PIC re-made sanitizer with hot water so that the tablets would properly dissolve for correct sanitization. *
35 Prepackaged food items (pastries) located at the front retail area- are not labeled properly with the name of product, ingredient statement, net weight, distributed by statement and/or nutritional facts.

1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. *PIC arrived before the end of inspection*
4 An open employee's beverage container was observed in the deli case at the food preparation area. An employee may not eat or drink unless the use occurs in designated areas where the contamination of exposed food cannot result. *PIC discarded drink at the time of inspection*
8 The employee handwash sink was blocked by a trash can at the time of inspection. A handwashing facility shall be maintained so that it is accessible at all times for employee use. *PIC relocated the trash can*
20 Multiple food items (sushi, pre-cut fruit, pre-packaged salami/ cheese) were held at 46-48 degrees F rather than 41 degrees F or below as required. *These items were discarded at the time of inspection and PIC was instructed to discontinue use of refrigeration case until serviced*

11 Severely dented canned items observed on the shelf of the retail floor area. **Dented canned items were removed from the shelf at the time of the inspection.
13 Raw food (Shelled Eggs) were stored above ready to eat foods in the walk-in cooler. **Eggs were relocated in the walk-in.
20 Foods (Sliced fruit, sliced cheesecakes, sushi) were held at 58.6 degrees F rather than 41 degrees F or below as required. **Person in charge placed an out of of order sign on the display unit at the time of the inspection.
21 Opened commercially processed ready to eat food, located in the deli display case, and held more than 48 hours, was not marked with the date it was opened. **Dates were placed on the deli meats.
