20 - Food (cheese, turkey, sliced cherry tomatoes, salami, and tuna salad) held in the cold prep unit and under-counter refrigerator between 53 degrees F and 43 degrees F rather than 41 degrees F or below as required. **PIC discarded the turkey, salami, cherry tomatoes, tuna salad, and cheese during inspection.
26 Bottle sprays in basement and ware washing area, used for storing chemicals taken from bulk supplies, were not marked with the common name of the chemical. PIC labeled the bottle sprays during inspection.
31 The cold display case and under-counter refrigerator in the cooking area was observed at 53 degrees F instead of 41 degrees F or less. Note: The food was removed from the units during inspection.
34 Temperature measuring devices for ensuring proper equipment temperatures are missing in the under-counter refrigerators cooking area.

Slices of pizza in the prep service area were held at 66.8 without any written document to verify disposition of food. Food item were removed from the area.
