1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code regarding cooling and temperature control methods.
*Cooling and temperature control methods were reviewed with the person in charge during inspection.
13 Container of rice was not covered while cooling in the middle of kitchen preparation area.
14 The chlorine concentration in the sanitizing solution of the 3-bay ware wash sink was observed 0 ppm, rather than 50-100 ppm as required.
18 Dumplings were not observed inside refrigeration unit after they were cooled at 70 degrees F.
21 * potentially hazardous ready to eat food, prepared in the food facility and located in the kitchen refrigeration was not date marked.
Instructed person in charge to date mark and label ready to eat food.
37 Cases of raw chicken stored directly on floor surface under hand wash sink and not stored at least 6 inches above the floor.
*Instructed person in charge to elevate cases of meat from floor surfaces.

8 Paper towels were not observed in the toilet rooms.
Note: The person in charge supplied paper towels.
31 The cold preparation unit was observed at 45-46 degrees F.
Note: The person in charge reduced the temperature to 41 degrees F.
41 Common bowls or food containers observed without handles in direct contact with bulk food ingredients.
Food dispensing utensils in the bulk containers were observed in direct contact with food and not having handles stored above the top of the food.
45 The following observations were noted:
-Cardboard shelf lining observed on storage racks in the food prep area
-Crates used for elevation
45 Non-NSF/ANSI equipment observed: Galaxy chest freezer, GE upright freezer. The garbage grinder was installed on a wall-mounted sink.
45 Cutting boards observed with deep scratches and scoring not allowing for effective cleaning and sanitizing.
47 Unclean non-food contact surfaces including shelves and shelf liners.
53 Debris on floor surface in walk-in cooler.

Corrective action: Person in charge removed container from blocking handwash sink.
14 Green slime observed on the interior of the ice machine bin.
Corrective action: Person in charge unplugged the ice machine for cleaning and discarded ice during time of inspection.
21 Potentially hazardous ready to eat food (Pre-cooked noodles, chicken, shrimp, egg rolls) prepared in the food facility and held for more than 48 hours, located in the walk-in cooler, was not date marked.
Corrective action: Person in charge date marked potentially hazardous ready to eat food (Pre-cooked noodles, chicken, shrimp, egg rolls) in the walk-in cooler during time of inspection.
36 An insect control device (Mouse bait) located in the food prep area with potential to contaminate food, equipment, and / or utensils.
Corrective action: Person in charge removed mouse baits during time of inspection.
37 Boxed oils is not stored at least 6 inches above the floor.
