20 Raw steak, pork roll, turkey bacon, and cut onions in the refrigerated drawer unit were held at temperatures greater than 41 degrees F or below as required for an undetermined amount of time. The unit was unplugged. The ambiant air was scanned at 60 degrees F in this unit.
All potentially hazardous foods were discarded.
Do not store potentially hazardous foods in this unit until it can maintain a temperature of 41 degrees F or lower.
45 -Ice accumulation on inner surfaces in the reach in freezer in the cage area.
-The refrigerated drawer unit is not stable when the right hand drawers are opened.
-A refrigerator in the rear prep area has a defective gasket on the door.
46 Food facility lacks QAC sanitizer test strips to monitor sanitizer concentration.
47 Observations:
-Yellow residue on the upper walls of the ice machine around the ice inlet area.
Staff began to empty and clean the unit at the request of the inspector.
-Grease accumulation and dust on surfaces in the fryer cabinets and on the exhaust hood filters.
-Residue on the refrigeration unit inner surfaces.
-Ice accumulation in the reach in freezer in the cage area.
53 Observations:
-Stains on the ceiling in the rear prep/warewash area.
-Residue on floor perimeters throughout.
53 -Broom and dust pan observed stored on the floor rather than hanging on a utility rack.
54 -Some refrigeration units are lacking working lights.

4 An open employee's beverage container was observed on a shelf next to boxes of wax paper in the rear storage area.
The employee moved the drinks.
8 -No sign or poster posted and a trash can at the handwash sink in the rear food prep/warewash area to remind food employees to wash their hands.
They were provided during the inspection.
13 Turkey bacon and pork roll stored above bags of cut onions in the refrigerated drawer unit.
The items were rearranged.
14 Not washing, rinsing, and sanitizing dishes properly due to a rapid leak at the wash basin.
The sink was set up to wash and sanitize only. The wash basin was empty.
14 Yellow residue observed on the interior of the ice machine bin on the walls.
The person in charge began emptying, cleaning, and sanitizing the unit during the inspection.
26 Sanitizer bucket stored on the counter next to cups and lids and the ice holder.
The bucket was moved away from the counter area.
45 -The 3 compartment sink wash basin is leaking rapidly. It does not hold water.
-Ice accumulation on inner surfaces in the reach in freezer in the cage area.
-The refrigerated drawer unit is not stable when the right hand drawers are opened.

-The mop was stored in the bucket rather than hanging on a utility rack.

6 Food employees observed donning single use gloves without a prior hand wash.
The inspector explained that hands must be washed before new gloves can be donned.
The employee washed her hands and put on new gloves.
8 There were no handwash reminder signs in the shared toilet rooms used by food staff.
Signs were placed over the sinks in these toilet rooms.
13 Raw beef steaks in packages were stored next to containers or bags of produce
in the reach in refrigeration units.
The items were rearranged.
14 Brown and tan residue observed on the interior of the ice machine bin around the sides and water inlet areas.
The person in charge began emptying, washing, rinsing and sanitizing the unit during the inspection.
45 -Cardboard is used to line refrigerator surfaces. This material is not easily cleaned.
-Plastic crates used to elevate items rather than NSF approved dunnage racks.
45 -The garbage grinder is not operating.
-Ice accumulation on inner surfaces in the reach in freezer in the cage area.
46 The test strips available for the sanitizer were lacking proper labeling and a legend.
47 Observations:

53 Observations:
-Static dust on the ceiling vent cover in the prep area.
-Residue on floor perimeters in the warewash/prep area.
-Black residue on the wall over the 3 basin sink.
53 Broom and dust pan observed stored on the floor rather than hanging on a utility rack.
54 -Some refrigeration units are lacking working lights.
-Two of six lights are not working in the exhaust hood.
