-Cardboard being used as shelf liner in the food prep area.
-Milk crates being used for elevation in the rear storage area.

-Dead roaches and debris along floor perimeter of basement area.
-Food debris along floor perimeter of food prep area.

1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code.
4 An employee's beverage containers was observed in a chest freezer and reach-in refrigeration in the rear area.
Corrective action: Person in charge removed containers during time of inspection.
6 The following observations were noted:
-Food Employee did not follow proper handwashing procedure. Soap and/or warm water not used.
-Food employees observed donning single use gloves without a prior hand wash.
-Food employee did not follow proper handwash procedures. Food employee did not wash hands between changing tasks.
8 The handwash sink in the warewashing area was blocked by table and not accessible at all times for employee use.
Corrective action: Person in charge removed table from blocking handwash sink during time of inspection.
8 The following observations were noted:
-Soap was not available at the handwash sink in the front food prep area and warewashing area.
Corrective action: Person in charge provided soap at the handwash sinks during time of inspection.
-The handwash sink in the warewashing area does not have single use towels, continuous towels, or air drying device.
Corrective action: Person in charge provided paper towels during time of inspection.
13 The following observations were noted:
-Spoon in stagnant water cup at coffee station.
Corrective action: Person in charge removed spoons and cups and provided plastic spoons to be discarded after every use.
-Tongs sitting on shelf under hot holding unit.
Corrective action: Person in charge removed tongs for washing, rinsing and sanitizing and to be stored inside hot holding unit when not in use.
14 Slicer has an accumulation of food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours.
Corrective action: Person in charge took apart slicer for washing, rinsing and sanitizing during time of inspection.
19 Pork, fried eggs, fried cheese was held between 95 and 100 degrees F rather than 135 degrees F or above as required.
Corrective action: Person in charge discarded food items during time of inspection.
20 Milk, eggs held between 47 and 52 degrees F, rather than 45 degrees F or below as required.
Corrective action: Advised person in charge to discard milk and eggs.
21 Opened commercially processed ready to eat food (Deli meat and cheeses), located in the cold prep unit, and held more than 48 hours, was not marked
with the date it was opened.
