14 Dead fly observed on the slicer feed table and some dried food residue observed in crevices of the slicer feed table.
The inspectors requested that the slicer removable parts be placed in the 3 basin sink for proper washing, rinsing, sanitizing, and air drying. The rest of the slicer must be cleaned in place.
37 There is no splash guard between the prep sink and the cold prep refrigerator and the 3 basin sink.
41 A spoon was stored in stagnant water rather than water at 135 degrees F or running water or no water.
45 -Plastic crates are used to elevate items rather than NSF approved dunnage racks in the retail and basement storage areas.
-Plastic crates observed in the deli display case.
45 Equipment is not in good repair:
-Loose faucet on the 3 basin sink.
-Non-commercial drain rack.

50 -The deli closed display case is draining into a container outside of the unit rather than to a catch basin.
-A condensate line is leaking onto items stored in the basement rather than to a catch basin.

8 No trash can provided at the hand sink in the prep area.
13 Observed heads of lettuce and whole tomatoes in the display case.
Observed sliced tomatoes and shredded lettuce in the cold prep refrigerator.
There is no dedicated stand alone, deep (at least 10 inches), indirectly drained and equipped with an accessible catch basin food prep sink for the washing of produce.
Stop the washing and use of whole produce that requires washing before use. Purchase all produce prewashed and prepped or install a food prep sink. Speak with Plan Review to discuss what is required.
14 Slicer has an accumulation of food residue on the inner food contact surfaces and is not being taken apart fully washed, rinsed and sanitized at least every 4 hours.
The person in charge removed the blade guard with assistance. The removable parts were placed in the 3 basin sink to be cleaned properly and the rest was cleaned in place.
An NSF approved slicer that is easily taken apart is required to ensure proper cleaning.
26 Chemicals (personal care items and other beauty products) were stored above or on the same shelf with candy and snacks in the cashier area.
There are no edges on the shelves to prevent the leaking of personal care items on candy and snacks stored below.
46.1041 - Storage & Display: Separation of Poisonous or Toxic Materials from Food
Poisonous or toxic materials shall be stored and displayed for retail sale so they cannot contaminate food, equipment, utensils, linens and single-service and single-use articles by one or both of the following:
(1) Separating the poisonous or toxic materials by spacing or partitioning.
(2) Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens and single-service or single-use articles.

1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
There was no Food Safety Certified Manager present at the beginning of the inspection. The person present had limited food safety knowledge.
An employee with a Philadelphia Food Safety Certificate arrived within the allotted time.
8 -The handwash sink in the food prep area was blocked by the door and a step stool, and not accesible at all times for employee use.
-The grinder is not working on this sink so it does not drain.
The door was closed to access the hand sink.
11 Expired (8 jars) baby food observed on the retail shelves. Dates in the range of 3/2022 - 10/2023.
An employee removed the jars to be discarded.

14 -Not washing, rinsing, and sanitizing dishes in the correct order. The worker was observed washing the slicer parts in the rinse basin with a sponge and then placing in the sanitizer.
The inspector requested that the rinse basin be emptied and filled with clean water.
-The quarterny ammonia sanitizer was tested at less than 200 ppm. Additional sanitizer pills were added and the solution was tested at 200 ppm.
The inspector reviewed the proper order with the employee who then begin washing, rinsing, and sanitizing the slicer parts.

The employee took off the blade guard and the other removable parts with the help of the food safety certified person. The parts were placed in the 3 basin sink to be cleaned.
