6 The following observations were noted:
-Food Employee did not follow proper handwashing procedure. Soap and/or warm water not used.
-Food employees donning single use gloves without a prior hand wash.
**Corrective action was taken, person in charge instructed food employees to remove gloves and properly wash their hands.**
13 The following observation were noted:
-Single-use cup without handle, used as scooper submerged in seasoning salt stored in working bulk container.
**Corrective action was take, food employee wash hands and wore gloves to remove single-use cup.**
-Handles of utensils (i.e. tongs and measuring cup) touching ready-to-eat food (i.e. cheese, sliced vegetables) stored in cold prep unit.
**Corrective action was taken, food employee was instructed by person in charge to discard food items.**
14 Observed wiping cloths observed stored in sanitizer bucket with sanitizer concentration ( quaternary ammonium concentration) of 100 ppm, rather than 200-400 ppm as stated on the manufacturer's use directions.
**Corrective action was taken, person in charge discarding and change the sanitize solution in sanitize buckets throughout the food prep area.**
19 Observed food (i.e. melted cheese) was held between 106 - 110 degrees F rather than 135 degrees F or above as required.
**Corrective action taken, person in charged turned on the temperature level on the hot-hold unit in order to achieve the required hot-hold temperature of 135 degree F at time of inspection.**
21 Observed opened commercially processed ready to eat food, located in the cold prep and walk-in refrigeration unit, and held more than 48 hours, was not marked with the date it was opened.
**Corrective action was taken, food employee date marked the food items at time of inspection.**
51 Observed handwash sink in the men's toilet room not clean to sight or touch.
54 Observed employees belongings (i.e. backpack, coats) stored on the same shelf and above food related items on storage rack in the rear storage space.
**(a) Designation. Dressing rooms or dressing areas shall be designated in a food facility if employees routinely change their clothes in that facility.
(b) Storage of employees’ clothing and possessions. Lockers or other suitable facilities shall be provided for the orderly storage of employees’ clothing and other possessions.
65 Observed food employees discarding grindable food in trash rather than disposing of it using the garbage grinder installed at the handwash sink in the warewash area.
**Health Sanitarian instructed food employee to use the garbage grinder to discard grindable food.**
