8 There was no water at or above 100 degrees F at the front handsink in the takeout area. A plumber was on site to fix the handsink during the inspection. He turned on the hot water on during the inspection. The door to the main kitchen will remain open until this handsink is repaired.
14 The 3 basin sink was set up with filled wash basin and filled sanitizer basin only. The rinse basin had a slow drain when stoppered. The plumber fixed the stopper to enable proper filling of the basin. -The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 0 ppm, rather than 50-100 ppm as required. There is a leak at the lines below. The person in charge directed employees to use the 3 bay sink for all dishwashing until the warewash machine is fixed.
14 The can opener had an accumulation of food residue on the food contact surfaces. The can opener was placed in the 3 bay sink for cleaning and sanitizing.
41 -Common bowls or food containers observed without handles in direct contact with bulk food ingredients. -A knife was stored on top of dusty equipment in the bar area. The knife was cleaned and sanitized during the inspection.
45 Equipment is not in good repair. -The 3 bay sink rinse basin stopper had a slow drain when engaged. The plumber fixed the stopper. -The warewash machine is not dispensing sanitizer. Observed a leak in the tubing connections. -The open display case in the take out area had an ambiant air temperature of 49 degrees F. All perishable items were removed from this refrigerator during the inspection.
45 Plastic crates used to elevate items rather than NSF approved dunnage racks.
46 A yellow buildup noted on the inner surfaces of the main kitchen dishwasher.
48 Hot water at 100 degrees F was lacking at the take out area hand sink. The water was probed at 75.6 degrees F initially. The plumber provided water above 100 degrees F.
53 General dust and debris observed on floor perimeters around equipment.
