PIC provided the written sign during inspection.
13 - Small plastic container with cheese observed in top of each other without the lids or other protection in the reach-in refrigerator prep area.
PIC covered all containers with cheese during inspection.
14 Pink slime observed on the interior of the ice machine bin.
PIC removed all the ice and cleaned the ice machine during inspection.

13 Small containers with shredded cheese without lid observed in top of each other in the reach-in refrigerator cooking area and walk-in cooler (inside area).
**Storing the food in packages, covered containers or wrappings.
17 Cheeses sauce in the warmer is not reheated prior to holding in the warmer. The food (gravy, white sauce) is reheated in the warmer.
*Potentially hazardous food that is cooked, cooled and reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 74°C (165°F) for 15 seconds.
19 Food (gravy and white sauce) was held at between 90 degrees F and 110 degrees F rather than 135 degrees F or above as required.
