-The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation.
**Food Safety Person arrived 30 mins later.**
-The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code.
**Corrective action was taken, Health Sanitarian demonstrated how to properly setup 3-compartment warewash sink to wash, rinse, sanitize cookware and utensils. Also, explained proper cold/hot hold temperature for food, proper handwash washing procedure.
9 Food facility Person in Charge not able to provide documentation(i.e. receipt purchase) that boxes of pastelillos stored in refrigeration units are from an approved source.

***Observed the establishment with a new constructed kitchen(food prep area) located in the rear of the store after the storage area. A time of inspection the kitchen was activity being use to sell hot food to customers.***

Prior food prep area observed used as storage room but, the closed display case is a permanent fixture in the now storage room and is currently use to store food, specifically blocks of cheese, deli meats and vegetables that are sliced in the new kitchen in the back past the storage area.
