1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code.
Note: Food safety certified person could not name the five reportable foodborne illnesses Norovirus, E. coli, Shigella, Hepatitis A, and Salmonella) and their symptoms(abdominal cramping, diarrhea, vomiting, fever with sore throat, jaundice...).

14 Several cutting boards (8 total) were observed stained with deep scratches. The person in charge was informed to discontinue the use of the cutting boards as they will not be able to properly sanitize the surfaces. The person in charge understood and discontinued the cutting boards.
