1 No designated person in charge present during inspection of the mobile food vending truck on 12-28-2023.
1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
6 -Food employees observed donning single use gloves without a prior hand wash. -Food employee did not follow proper handwash procedures. Food employee did not wash hands between changing tasks. -Hands cannot be properly washed at handwash sink inside the mobile food vending truck due to lack of hot and cold water.
7 A food employee was observed touching ready to eat food (pastelillos) with his bare hands.
8 -Hot and cold water not available at handwash sink inside the mobile food vending truck during inspection of 12-28-2023. -Soap was not available at the handwash sink in the * area.
8 The handwash sink in the mobile food vending truck was blocked by a cutting board &box of eggs and not accesible at all times for employee use. Corrective action : An employee removed the cutting board and box of eggs from the handwash sink inside the mobile food vending truck during inspection.

13 Observed mixing and slicing of dough for pastelillos preparation inside the mobile food vending truck. *Preparation of pastillios should be conducted at the commissary / support facility Service location.
19 Pastelillos inside display case for holding hot food were held at *69 degrees F rather than 135 degrees F or above as required.
20 Burger, sausages, cheese and cut lettuce in cold-prep refrigeration unit were held at 47-49 degrees F rather than 41 degrees F or below as required.
