14 The quaternary ammonium concentration in the sanitizing solution of the 3-bay warewash sink and all sanitizer buckets were 0-100 ppm, rather than 200 ppm as stated on the manufacturer's use directions.
**The facility's sanitizer dispenser was not functioning properly. The PIC emptied the sink and buckets, manually added sanitizer to the appropriate concentration; corrective action taken.

47 -Ice accumulation observed on the fan guards in the walk in freezer.
-Grease and debris accumulation observed on the cooking equipment.

Person in Charge discarded the tomatoes due to being over the 4 hour time period.

14 Drink dispenser observed needing to be cleaned. Sanitarian advised the person in charge to shut down the drink dispenser completely and to take it a part clean and sanitize the machine. Person in charge cleaned and sanitized the machine during the time of inspection.
22 Time in lieu of temperature being used as a control for potentially hazardous foods, employee wasn't aware of how to properly mark time food. Person in charge remarked all hazardous food during the time of inspection.
35 Containers in the walk in were not labeled with the name of the contents on it.
39 Moist wiping cloths observed lying on counter and not stored in sanitizing solution.
