1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
The person in charge has a class certificate but no Philadelphia Food Manager Food Safety Certificate.
The application will be emailed with this report.
8 -Hand sinks throughout were lacking trash cans.
-The warewash area hand sink was lacking soap.
-The restaurant area hand sink was lacking paper towels.
The required items were provided.
-No sign or poster posted at the handwash sink in the employee toilet room and Girl's Toilet Room areas to remind food employees to wash their hands.
8 Water at 100 degrees F not provided in the Girl's bathroom where culinary students wash their hands.
13 A bowl of raw chicken was stored over a box of egg products in the walk in freezer.
The bowl of raw chicken was placed on the lowest shelf and the box of egg products were placed on the higher shelf.
14 Equipment food contact surfaces were not clean to sight and touch.
-Green residue observed on water contact surfaces in the small ice machine in the restaurant area. For example, water inlet tube and cover inside the unit.
The inspector requested that the ice machine be turned off, emptied, washed, rinsed, and sanitized before further use.
-The can opener had an accumulation of residue on the food contact surfaces.
The can opener was placed in the 3 basin sink to be washed, rinsed, and sanitized before further use.
-Slicer has an accumulation of dried food residue on the food contact surfaces and is not being washed, rinsed and sanitized at least every 4 hours.
The slicer was taken apart. The slicer guard holder was not removed. The slicer must be disassembled completely to enable thorough cleaning.
An employee began cleaning the slicer during the inspection.
36 Yellow residue and mouse droppings observed on lower shelf surfaces in the rear storage room.
45 Equipment does not meet minimum design standards.
-The grinder at the produce prep sink is not operating properly.
-Green residue is collecting in the water inlet line of the small ice machine in the restaurant area.
-Non-commercial: microwave, air fryer, NINJA grill, and toaster.
47 Observations:
-Mouse droppings and yellow residue observed on lower shelves in the rear storage area around large pots.
-Food residue on storage shelf surfaces.
-Food residue and oil on surfaces in the Rational oven.
-Tape on surfaces of some ovens, warewash machine, and the small ice machine in the restaurant area.
-Food debris in the sink in the warewash machine area.
-Brown residue in the ice bin in the restaurant area.
-Yellow residue on the inner surfaces of the warewash machine.
-Dust on equipment surfaces. For example the dough press machine.
48 Water at 100 degrees F not provided in the Girl's bathroom near the culinary department.
51 The toilet rooms are lacking covered cans for sanitary napkin disposal.
52 Trash cans are not provided at hand wash sinks in the kitchen where paper towel waste is generated.
53 Observations:
-Residue, dust and debris on the floor perimeters in the warewash, restaurant, and cooking areas.
-Static dust on walls and ceiling surfaces in the kitchen and classroom areas.
-Water stained, stained, and missing ceiling tiles observed in the women's locker room, storage room, and laundry room.
-Dust on the ceiling vent cover in the kitchen area.
The building engineer cleaned the vent during the inspection.
53 The broom and dust pan are stored on the floor rather than hanging on a utility rack.
54 The classroom lights are delayed in turning on. One of six lights was not observed working in the classroom.
