1 Facility's food safety certified person does not present at start of inspection. *The person arrived before the completion of the inspection.
6 Food employees did not follow proper handwash procedures. Food employees did not wash hands between changing tasks. *The inspector instructed one of the employees to wash their hands between changing tasks.
8 The handwash sink in the food prep area does not have single use towels, continuous towels, or air drying device. *The person in charge was instructed to put single use towels, continuous towels, or air drying device next to the handwash sink.
14 The chlorine concentration in the sanitizing solution of the 3-bay warewash sink was 500 ppm, rather than 50-100 ppm as required. *Sanitarian instructed the Person in cahrge on how to properly setup the 3 bay sink for sanitation and the chlorine concentration was measured a 100 ppm.
14 Black residue observed on the interior of the ice machine bin. *Person in charge was instructed to take immediate corrective actions.

1 The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. *The Phila Food saftey certified person arrived during the inspection.
1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code. The person in charge could not demonstrate proper sanitizing techniques for washing dishes and equipment. *The sanitarian review proper washing, rinsing, and sanitizing methods with the person in charge.
8 The hand washing sink in the food prep area lacks a sign reminding employees to wash their hands.
14 Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use. *The Sanitarian reviewed proper washing, rinsing, and sanitizing techniques with the person in charge. Food facility grade bleach was available in the facility.
