21 Opened commercially processed ready to eat food (cheese), located in the rear refrigeration unit, and held more than 48 hours, was not marked with the date it was opened. The person in charge date marked the cheese.

53 The following observations were noted: -Floor cleaning was needed in the basement preparation area due to debris. -Cob webs in the basement area were in need of cleaning.

The person in charge placed a sign. -No soap was available at the handwashing sink located in the basement food preparation area. The person in charge supplied soap.
53 Brooms and dust pans were not properly elevated off of the floor in the rear warewashing area and basement food preparation area.
