1 The Person in Charge did not demonstrate adequate knowledge of the Philadelphia Food Code.
** PIC did not know the internal temperature of fully cooked chicken (165 degree F), how often to wash food contact surfaces (every 4 hours), how to set up and utilize the three basin sink, or three food borne illnesses (e.g. E Coli, salmonella, norovirus).
** Advised to study food safety.
2 Food facility does not have a Health Awareness Reporting Procedure for food employees.
Corrective Action: A Health Awareness Reporting Procedure was distributed to the owner and they were advised to hang the paper for all employees to see.
8 -Observed handwashing amenities (soap and handwashing reminder signage) present at the utility sink in the restroom.
-Observed paper towels present at the three basin sink.
