8 Paper towels were not available at the hand washing sink in the ware washing area and at the TRU station. The person in charge provided paper towels to both areas.
11 -Romaine lettuce and sliced tomatoes observed held at 52-50 degrees F instead of 41 degrees F as required at the cold buffet bar at the TRU station.
-Sour cream and cheeses observed held at 52-50 degrees F instead of at least 45 degrees F as required.
The person in charge relocated the food items to the blast chiller to bring all foods to the appropriate temperature during the inspection.
31 The cold buffet bars in the TRU station and Grill station were observed at holding capacity of 52-50 degrees F instead of at least 41 degrees or lower as required. The facility discontinued use of cold bars and are using nearby reach in refrigerators.
35 Flour and sugar storage containers are not labeled with the common name of the food. The person in charge labeled the items during inspection.
45 Inoperable under the counter refrigerator observed in the TRU station.
45 An inoperable ice cream chest freezer observed in the food prep area.
53 Idle mop observed stored in the utility sink and not hung properly for air drying.
53 -Debris observed on the floor of the food prep area, both dry storage rooms, and ware washing room.
54 Hood filters have an accumulation of static dust and grease.
54 The exhaust at grill station observed not functioning properly. Heating, ventilating and air conditioning systems in a food facility shall be designed and installed so that make-up air intake and exhaust vents do not cause contamination of food, food-contact surfaces, equipment or utensils.

1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
***Food safety certified person has a valid Servsafe but doesnot have a valid City of Philadelphia food establishment personnel food safety certificate. Application was email at the time of the inspection.
8 The food facility does not have a handwash sink conveniently located in the dishroom and in the catering room near the coffee machines.
**Establishment has decided to discontinue use of multi-use plates and utensils and provide paper products until a handwash sink can be installed in the dishroom.
21 Opened commercially processed ready to eat food (cheese), located in the walk-in cooler, was not marked with the date it was opened. Food items were date marked at the time of the inspection.
37 Food is not stored at least 6 inches above the floor in the walk-in freezer.
45 Inoperable under the counter refrigerator observed in the TRU station.
48 Delayed hot water observed at the handwash sink in the prep and warewash area. Hot water took approximately 2-3 mins to reach peak demand.
53 - Debris observed on the floor in the utility closet
- Food residue observed on the ceiling tiles in the prep area
- Debris observed along the floor perimeter of the catering storage area and the dry storage room.
- Old mouse droppings observed on the shelf of the chemical supply room
- Food debris observed under the shelving unit in the walk-in cooler
- Food debris observed on the side of the cooking equipment in the Tru station
53 - Cracked tiles observed on the wall under the warewash sink in the warewash area
- Missing ceiling tiles observed in the catering storage room
- Unsealed pipe penetration lines observed in the ceiling near the ice machine
