21 Multiple potentially hazardous ready-to-eat food items, prepared in the food facility and held for more than 48 hours, located in the under-counter refrigeration unit and walk-in cooler, were not date marked. *PIC provided date marking at the time of inspection*
22 Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food. *PIC says chicken was prepared/ cooked at 11 AM and at 2:30 PM was temping at 61 degrees, but PIC had no documentation; chicken was relocated to refrigeration unit*
26 Working containers in prep area, used for storing chemicals taken from bulk supplies, were not marked with the common name of the chemical. (degreaser) *PIC provided a label for the chemical at the time of inspection*
35 Working bulk food ingredient storage containers are not labeled with the common name of the food.
39 Moist wiping cloths observed lying on the cold prep counter and not stored in sanitizing solution.
41 Common bowls or food containers observed without handles in direct contact with bulk food ingredients. (observed in containers of raw chicken and bulk ingredients).
41 Utensils were observed in containers of murky, room temperature water. *If storing utensil in a container of water during pauses in food preparation or dispensing, food preparation and dispensing utensils may be stored in a container of water only if the water is maintained at a temperature of at least 135°F.
