14 The quarternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 0ppm, rather than 200ppm as stated on the manufacturer's use directions.
Corrected on Site: Food employee made a new batch of sanitizer that was measured at 200ppm
20 Observed tomatoes, raw eggs, and mayo held at degrees ranging from 59.1 to 66.2 F rather than 41 degrees F or below as required.
