20 Pico de gallo, cheese, pork was held between 46-57 degrees F rather than 41 degrees F or below as required. See discard list. Pork was relocated to bring food temperatures down.

Unapproved Reduced oxygen packaging (ROP) operation observed without HACCP plan submission. Frozen meat must be retained until HACCP plan is approved. ROP fish was discarded. Plan Review Packet was emailed.
