The scoop was stood up in the container.
45 Cutting boards observed with deep scratches and scoring not allowing for effective cleaning and sanitizing.
46 No drain rack observed for dishes and utensils.
47 -Spills and residue observed inside the refrigeration units.
51 Static dust observed on the ceiling vents in the shared toilet rooms.

1 No person shall operate a food establishment that handles, prepares or serves non-prepackaged potentially hazardous food who does not have present and in the employ of the food establishment at all hours of operation at least one (1) person with a valid Food Establishment Personnel Food Safety Certificate issued by the Department.
There was no one present with a valid Philadelphia Food Manager Certificate at the beginning of the inspection. The manager present has a certificate that expired in 2022.
An employee with a valid Philadelphia Food Manager Certificate arrived within the allotted time.
8 Handwash sinks are lacking adequate supplies.
-The paper towels readily available in the dispenser at the hand sink in the prep area were water damaged.
A roll of paper towels were provided.
-The shared bathrooms adjacent to the restaurant are lacking handwash reminder signs.
8 The handwash sink in the prep area was blocked by a bucket and not accessible at all times for employee use.
The bucket was moved.
14 The 3 basin sink in the restaurant is not in good repair. It is kept covered. There is no hot water readily available at this sink. The basins are all dirty.
Management states that presently all clean utensils come from the B Terminal location.
The 3 basin sink should be working properly and used to wash, rinse and sanitize.
26 Chemicals (cleaning solutions) were stored above or on the same shelf with food (prepackaged beverages) , equipment, and/or single service articles in the prep / storage area.
The bottles were moved.
35 Prepackaged cookies are not labeled properly with the distributor address.
36 Visible physical evidence of rodent activity (mouse droppings) observed in the prep/service areas.
38 Food employees observed not wearing or wearing ineffective hair restraints, such as nets, hats, or beard restraints.
41 -Knives stored under cutting board.
-Common bowls or food containers observed without handles in direct contact with bulk food ingredients.
45 Equipment is not in good repair.
-The 3 basin sink is lacking hot water and kept covered. Management stated that it is often clogged.
-Unused equipment in the prep area.
46 No drain rack observed for dishes and utensils.
47 -Spills and residue observed inside the refrigeration units and unused ice machine.
48 No hot water at 110 degrees F or higher readily available at the 3 basin sink in the prep area.
Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food facility.

-Mouse droppings, food debris, coffee beans and grounds, dust, and debris on floor perimeters under the counter near sinks and under shelving behind the open display case.

Hot water was provided while the report was typed. The water reached 100 degrees F before the report was completed.

47 -Observed flies landing on surfaces in the prep/service and dining areas.

The bottles were moved.
The cutting boards were cleaned and sanitized before use.
8 Soap was not available at the handwash sink.
The dispenser was filled with soap.
8 The shared bathroom handwash sinks closest to the restaurant did not have water readily available at or above 100 degrees F.
Employees must wash their hands at the prep/ service area hand sink once they return to the restaurant.
20 -Potentially hazardous food in a cold prep refrigerator was held at temperatures greater than 41 degrees F or below as required.
-Cheese held at temperatures greater than 45 degrees F or below as required.
Due to a lack of documentation on how long the food was held out of temperature, the items probed out of temperature were discarded.
Do not use this unit to store potentially hazardous foods until it can maintain them at 41 degrees F or lower.
34 Temperature measuring devices (probe thermometer) for ensuring proper temperatures of food are not available or readily accessible.

45 -The cold prep refrigerator containing sandwich prep ingredients was not maintaining a temperature of 41 degrees F or lower. The ambiant air temperature was 58 degrees F. This unit was also lacking a lid on the top.
